Let me introduce you to the Carolina Skillet Omelet, First you’ll need a nice cast iron skillet. Having a bunch of chickens laying eggs doesn’t hurt either. We like to start with 8 to 10 eggs and a ¼ cup of whole milk with a little salt and pepper. Add some spring onions, red onion and green peppers.
Then add some ham. We had some leftover ham… Nice!
Lightly Sautee your red onion and peppers in a few tablespoons of stick butter.
Add your ham, or meat of choice, till warm. Sausage and bacon work great too!
Pour in your eggs, and bake at 400 for 10 minutes
Add some cheese and spring onions on top and bake for another 10 minutes (or until done)
We serve ours with some sour cream, spring onion, hot sauce and grandma’s sugar and cinnamon toast!
Working on the farm can take a toll on your muscles! Jane likes to make us up a batch of pain cream for our sore muscles with her Young Living Essential Oils. She uses coconut oil mixed with some Panaway, Lemongrass, Copaiba, Valor and Peppermint Essential Oils to create a cream to soothe our sore muscles.

Adding Copaiba which supports the body's natural response to injury or irritation.
Keep it in a 4 oz mason jar and just rub some on your aching muscles and you’re ready to go!

It’s time those weeds pay for taking over the garden! The weeds really took over at the end of the season; anyone who gardens knows how hard it is to keep them out. We have some boxes and hay mixed with chicken poop planned for next year. Hopefully round 2 will go in our favor! But today…. We get our payback!
Fire safety is a priority out here in the country, that’s why we give each kid a box of matches to play with.
